San Cosme Mezcal is a spirit obtained from the agave Espadin. It is produced in the state of Oaxaca in southern Mexico. The production process is distillery art: during the harvest, the leaves of the agave are separated from the inside of the plant. Then the agave hearts are cooked in the traditional way, which is done underground in specially excavated pit ovens.

The aromas of the soil and smoke are thus absorbed, they give the mezcal its characteristic flavor. A spontaneous fermentation takes place in open wooden barrels, while the distillation process is carried out in a copper pot still, over an open fire.

Recipe

Recipe for a San Cosme Mule

- 4 cl San Cosme Mezcal
- 2 cl lime juice
- Ginger Beer or Ginger Ale
- 2-3 cucumber slices

The mezcal is shaken together with lime juice and cucumber slices on ice and then strained into a glass filled with ice cubes.

Then fill up with ginger beer or ginger ale, after that you have to stir carefully.

Finally, you can garnish with lime slice, cucumber or mint as needed.
