Nixtamalized corn flour is obtained by grinding reddish corn kernels (Zea Mays) that have been previously selected, cleaned and cooked in a solution of water and ground lime. Finally, they are dehydrated to obtain MazaReal's nixtamalized corn flour. The term nixtamalization refers to an ancient process in which dried corn kernels are boiled in an alkaline solution.
This nixtamal flour is made by crushing the pre-cooked corn kernels in a mixture of water and lime.
