Panela is a type of unrefined cane sugar. More precisely, dehydrated cane sugar juice. It is obtained from the boiled juice of the sugar cane, which is dried until it becomes solid. It is not chemically processed or refined, so that all the nutrients are retained.

Panela thus serves as a substitute for conventional sugar. However, whole cane sugar provides us with vitamins (A, B, C, D, E) and important minerals such as calcium, copper, potassium, phosphorus, iron, magnesium and zinc. Its mineral content is 50 times higher than that of refined sugar.

Although it is a typical Latin American ingredient, it is also consumed in parts of Asia. This product comes from Colombia, but is also used in this way in Mexico.
