They are made with blue corn, beans and chili, ingredients that are found regionally in Mexico. They are very tasty! The Tlacoyo is a kind of oval cake made with nixtamalized blue corn, that can be filled with different vegetable or meat additions, such as beans, broad beans, chicharrón (pork belly bacon) or cottage cheese. Typical tlacoyos are usually served with cream, cheese, salsa, nopales, onions and cilantro. Blue tlacoyos from Las Paisanas are made from natural blue corn, without dyes, preservatives or flavorings and they are handmade. The Las Paisanas brand was founded in Germany and is the first gorditas and tlacoyos manufacturer in Germany.

It is believed that the original inhabitants carried this dish as provisions on long journeys.
