Huaraches are a traditionally versatile dish in Mexico. They are basically large tortillas in the shape of the soles of shoes for those who are a little hungrier. The huaraches used here are certified organic by the brand Masamor. Mexican immigrants produce them in Switzerland and they have become very popular in Germany.
In our recipe variant, we add a premium product with salsa verde from Las Chachitas, as well as delicious queso oaxaqueno that melts wonderfully and a strong chorizo from Käserei Südamerika. Complemented by the well-known mild, light-colored bean puree from Isadora.
These are the few ingredients you need for huaraches with chorizo
For 2-3 persons/portion
- 480g Masamor Huaraches Pack (2-5 Huaraches from this per meal)
- 500g Chorizo from Käserei Südamerika
- 250g Queso Oaxaqueno from Käserei Südamerika
- 180g Glass Salsa Verde from Las Chachitas
- 430g Light bean puree from Isadora
- 700ml Horchata Concentrate, which has to be heavily diluted with water and chilled as a drink beforehand

Here you can find the preparation steps again in text form:
- Dilute the horchata concentrate with water, stir thoroughly and chill the mixture for later.
- Fry the chorizo in a pan until it is nice and crumbly.
- Heat the bean puree separately in a pan.
- Heat the huaraches in a very hot pan, turn them over after a minute and then again after about 20-30 seconds.
- Spread the huaraches with the bean puree, add the chorizo, pluck strips from the queso and place them on the warm chorizo to melt. Then add some salsa verde and serve with cool horchata water.
